  West Lake Longjing, known as the "Queen of Green Tea", is named after the mountains surrounding West Lake Longjing Village in Hangzhou.

The name of West Lake Longjing originated in Song Dynasty, Wen Yu Yuan, Yang Yu Ming, Sheng Yu Qing.

Legend has it that when Emperor Qianlong of the Qing Dynasty visited the West Lake, he highly praised the West Lake Longjing Tea and named the eighteen tea trees in front of Hugong Temple at the foot of Shifeng Mountain as "Royal Tea".

  "Longjing is the name of the place, the spring, and the name of the tea." According to Shen Hong, a national first-class tea critic, due to the temperature, light, relative humidity, rainfall and other growth conditions, the famous green tea in China is mostly distributed in the northern latitudes.   In order to ensure the quality and taste of tea, the production of West Lake Longjing is very particular.

"Hand-frying tea, picking is the premise, finishing the green is the foundation, and the key is the hot pot. There are more than a dozen processes in the West Lake Longjing, and none of them should be neglected." Fan Shenghua is the intangible cultural heritage of Zhejiang Province. The representative inheritor of the skill has been dealing with West Lake Longjing for more than 40 years.

"Fan Shenghua said that generally fresh leaves with a water content of 75% will eventually become dry tea with a water content of about 6%, and 500 grams of premium West Lake Longjing usually takes six or seven hours to fry.

  To brew West Lake Longjing, it is most suitable to use high-quality white porcelain cups and glass cups.

Half of the water is poured into the tea, the hanging pot is high flushed, the green and yellow tea leaves are tumbling in the water, and the shades are appropriate like a Chinese ink painting.
