On April 4, the reporter walked into the Shuijingfang Museum to visit this charming ancient brewery.

Shuijingfang Museum is located in Shuijing Street, Jinjiang District, Chengdu, and opened to the public in July 2013. The museum systematically preserves the "Shuijing Street Distillery Site" in its original location, and reproduces the national intangible cultural heritage - "Shuijingfang Wine Traditional Brewing Technique" with real production scenes. According to Wang Gang, director of Shuijingfang Museum, the site of Shuijing Street Winery is the most complete and earliest existing archaeological discovery site of wine at home and abroad. In the excavation area of the core site, various brewing facilities such as drying halls, cellar pools, still bases, stoves, ash pits, and wooden pillars of different ages have completely restored a complete set of technological processes for people brewing distilled spirits in ancient times. This old brewery actually smells a very strong aroma of wine, because to this day the brewery is still engaged in real sake production. Brewing has requirements for the environment, which needs ventilation, ventilation, shading, and shelter from rain, so when we look up, we will see many staggered and small windows above the roof, which are called lion's mouth. This is actually a window opening method that is often used to introduce light and flowing air in wooden houses in western Sichuan, and it will be applied in many old factory buildings. And on both sides of this winery, we will also see many neatly arranged cellar pools, the so-called cellar pool is a container for the fermentation of sake lees, they are about two meters deep below the surface, which contains all sake lees, which are now fermenting, the surface is sealed with a layer of yellow mud, the thickness of yellow mud is about 15 cm thick, fermentation time will last about 2 to 3 months, after the end of fermentation, we will open the cellar, take out the lees for distillation to take out the wine.
