Recipe :

For 4 people


200 g of chicken liver


100 of marrow


3 cloves of garlic


40 cl of milk


10 cl of cream


3 whole eggs + 2 yolks


Equipment: 4 high-sided ramekins


Preheat the oven to 90°C.


Mix the livers, marrow, peeled garlic cloves and pass everything through a very fine sieve.


Add the eggs and beat well.

Add milk and cream and mix.

Salt, pepper.


Pour the preparation into the molds and cook in a bain-marie in the oven for about 1 hour (depending on the power of your oven).


Unmould the cakes on the plates and cover them with a yellow wine sauce to accompany them.
