This Sunday, we offer a spicy dish with Maghreb flavors. This tajine revisited replaces the lamb by the vegetable mince.

Ingredients for 4 persons)

  • 200 g vegetable chopped
  • ½ bunch of parsley
  • ½ onion
  • 2 zucchini (about 300 g)
  • 1 carrot
  • 60 g chickpeas
  • 1 C. Ras el-hanout coffee machine
  • 1 sweet pepper
  • 10 g of flaked almonds
  • 1 C. oil soup
  • Salt and pepper from the mill

Preparation of the recipe

1. Remove both ends of the zucchini and cut in four lengthwise and then into sticks. Peel and cut the carrot into thin slices. Blanch it for six minutes in boiling water.

2. Slice the chilli and remove the seeds. Finely chop the onion.

3. In a saucepan, prepare a broth with 25 cl of water, Ras el-hanout, sweet pepper and chickpeas. Let reduce to a third.

4. Roast the almonds in a pan.

5. Season the vegetable mince with salt, pepper, finely chopped parsley and onion. Then make dumplings in the palms of your hands and sear them in a pan with a little oil. Finally, snap zucchini in a row and place the vegetables in a tajine dish and add the reduced broth.

6. Finally, preheat your oven to 180 ° C (item 6). Bake the dish tajine for fifteen minutes then just when serving, add the balls and almonds. Enjoy your meal !
