Mindful Eating is a trend that is gaining weight among the eating habits of our society. Far from identifying with any type of diet, it has to do with caring for and being very aware of the relationship we maintain with the food we consume. It can help avoid certain processes such as bad digestion, anxiety or overweight and even helps us to reconcile our emotions related to the time of the meal.

Lidia Torrent and Roberto Bosquet, better known as Chef Bosquet, immerse themselves in this concept in the first chapter of Opening the fridge, a series of videos that come from the Danish dairy cooperative Arla Foods. "When I discovered Mindful Eating I realized that I practice it every day. It consists of being aware of what you eat, why you eat it, what effect it will have on your body... And also if they are quality foods, what ingredients they have, that it is as natural as possible ... Your energy will depend on it, because food is your gasoline. It helps you recover, be more active, rest and even look better," says Chef Bosquet.

Roberto was a firefighter. In fact, it still is. But after nine years dedicating himself to this profession, he decided to take a leave of absence to turn to his true passion: cooking. That's how he became Chef Bosquet and, although before taking this leap he hardly used social networks, he opened an Instagram account. Encouraged by his wife and his best friend, he began to upload recipes and his followers, who already exceed one million, began to imitate him.

And his intention was none other than to continue helping people, but this time through food, a very different way than he had done until then. "My goal is to show that you can eat healthy and, at the same time, enjoy healthy food, as much or more than with what is not so healthy. I was looking to inspire someone, but I never imagined I could get to the point where millions of people made my recipes," she says.

A disordered life, the stress to which we are subjected every day or the lack of time are factors that do not contribute to our diet being the healthiest. We get home and, if we are not sure what we are going to eat or what we are going to have for dinner, it may happen that we end up resorting to ultra-processed foods. "Not all defendants are bad. In fact, everything in the supermarket is more or less processed. The most important thing is that the food is made with natural ingredients, that there are not many ingredients in each product and, above all, that they do not contain additives. That is the basic difference between a good processed and an ultra-processed, "explains Roberto.

However, he is convinced that the most important thing is to plan weekly what we are going to eat. "It's critical to understand how your body works and what you need at all times. Planning not only saves us time, but also helps us find balance in what we eat. Sunday, for example, is a perfect day to plan the whole week. In half an hour you can do it: you organize the purchase and you can even leave some preparations done. The typical batch cooking, which is now so fashionable... And, thus, you know what you are going to cook at all times and you do not have to waste time thinking about it. Everything is faster," he adds.

And one of the foods that can not be missing in that planning is cheese. We are talking about a food so versatile that it can appear in practically any dish and that Chef Bosquet loves: "I use it a lot. I use Arla Foods cheese spread, for example, in cheeesecakes. It gives texture, freshness and a brutal creaminess. It's a recipe that people always love... and they repeat! But I also use grated mozzarella a lot for pizzas, which they are a big fan of. I make them from practically any ingredient you can imagine: broccoli, eggplant, zucchini, quinoa... And with this cheese they look great."

A healthy and delicious dessert

Chef Bosquet has also given us the recipe for his delicious deconstructed cheesecake, a dish with which you will surely surprise your guests and that will not take you more than 10 minutes to prepare. It's delicious, requires no waiting times and will make you look like a real chef. To achieve this, you just have to complete these three elaborations.

  • First, we will prepare a homemade blueberry jam, made exclusively with blueberries and dates, which will give it a sweet touch. Just add a little water to cook them, crush them ... and that's it! It will be a spectacular texture using, only, natural ingredients.
  • Afterwards, we will make a homemade granola. To do this, in the oven, we will prepare a cookie with cashews, coconut oil and dates. When it is ready, we will break it and mix it with ingredients such as raisins, coconut or goji berries. We can also put cinnamon and ginger to give it a touch more flavor.
  • Finally, it's time to prepare the cheesecake itself. To do this, we will use cream that we will already have whipped and natural cream cheese. In this case, Chef Bosquet has chosen Arla Natural Cheese Spread, but the lactofree variety could also be used if we have a lactose intolerant among our guests. When mixed with cream, in addition to giving it flavor and consistency, it will provide the recipe with extra proteins, essential to maintain and regenerate tissues, muscles and bones.

And now we only have to assemble everything! The first thing is to add a tablespoon of jam on the plate, as a base. On it, we will place a ball of cheese and, on top, we will pour a little granola. Finally, we add some blueberries to decorate ... and we have a simple, delicious and healthy recipe ready!
