- We know that bread and dairy products are the goods we waste the most at home.

So semlan is really a high-risk pastry, says Helena Thelin, communications manager for Too Good To Go in Sweden.

Together with various partners, including the bakery industry, they have developed recipes for how to bake rolls on waste from other products.

It has also been ensured that rolls in some bakeries or cafés can be sold the next day at a lower price.
