• Tradition 11 patisseries to enjoy the best French toast

Staying in Madrid on vacation has its good things, like

finding a table in restaurants that usually fill up on Fridays and Saturdays

a week or two in advance at any other time of the year.

On this occasion we have selected openings where pizza and rice are the protagonists, but also classics that are renewed with spring.

There is room for places that have made word of mouth their best ally, where fusion becomes art or where torreznos become a cult dish.

What they all have in common is that they are the perfect excuse to

celebrate a long after-meal conversation

.

KUOCO 360º FOOD

This small place in the Chueca neighborhood is quite a discovery.

Theirs is a high-altitude fusion cuisine,

where good products prevail, flavors are enhanced and there are no rules

.

This is how chef Rafa Bergamo and his team work.

Croquettes, ceviche, steak tartare, wild sea bass and honeyed cow cheeks are some of the delicacies on his menu.

They also offer a tasting menu.

Their cheesecake is another of the hits that you have to try.

In this Italian with a circus air, eating is quite a spectacle.

While you taste some gorgonzola gnocchi with fresh truffle or prawn ravioli with hollandaise foam and dill

, harlequins and magicians parade through the room, Italian music from the 80s and 90s plays

and the chef can come out of the kitchen to sing opera.

The pizzas are an excellent option and they have a raw food section on the menu.

THE MARITERRANEAN

Pilar Jorcano and Antonio Posillipo are behind this rice restaurant that opened its first place on the island of Formentera.

The Valencian origins of both forced them to give prominence to the paellas, made with rice from their own cultivation cooked with a broth with a secret recipe.

They have the Valenciana with chicken and rabbit and the senyoret, with peeled shellfish.

More creative are the one with marine plankton or the one with foie gras and spring garlic.
