In its seventh edition, Joselito Lab evolves with the launch of its first printed format, written by Marta Fernández Guadaño and photographically documented by Luis de las Alas, whose protagonists are Bittor Arginzoniz, head of Asador Etxebarri, and Jose Gomez, general manager of Joselito .

Both lead two of the best positioned and internationally recognized houses and claim the essence of the product together with the best culinary technique.

JOSELITO X ETXEBARRI collects through its pages anecdotes, milestones, memories, curiosities, recipes, reflections and stories of the Basque barbecue griller and the maker of the iconic ham, united by a close friendship.

The author, founder of the Gastroeconomy portal and contributor to the gastronomic press in newspapers and magazines, builds a story around the relationship of more than 30 years between Arginzoniz and Gomez, who share a philosophy of gastronomic excellence and their passion for preparing perfect product.

Etxebarri is chef Bittor Arginzoniz's steakhouse, located in the idyllic natural setting of the Atxondo Valley, in Vizcaya, renowned for its grill and the ancient technique of using different types of firewood, fire, embers and the scented imprint of the fumes.

Joselito, a brand founded in 1868 in Guijuelo (Salamanca) by Vicente Gomez, produces the best Iberian products in the sector with ham as its flagship, a gastronomic jewel acclaimed by prestigious critics and chefs.

The Spanish chef Bittor Arginzoniz has been responsible for researching, testing and evolving the infinite possibilities of the Joselito pig in haute cuisine within the framework of JoselitoLab, in a very unique edition in which everything happens around a grill and its embers.

Always hidden among wood, fires, embers and aromatic smoke, Bittor Arginzoniz is the chef and owner of the Asador de Etxebarri, ranked third in the latest edition of the international list The World's 50 Best Restaurants, in addition to 1 Michelin star and 3 Repsol soles.

This Basque chef, self-taught and fully committed to his cuisine and his philosophy, is recognized on the global gastronomic scene as the best griller on the planet.

Also considered one of the most demanding in terms of the quality of the products it uses.

His undeniable excellence on the grill and his superlative demands on the product have made him the perfect protagonist for this new Joselito Lab format in which the different pieces and cuts of Joselito pork are cooked exclusively in the heat of their embers, from the most honest and transparent way to exalt all its organoleptic properties.

While the book JOSELITO X ETXEBARRI delves into his philosophy as a demanding seeker of gastronomic excellence and as a "chef specializing in grilling" -as he defines himself-.

About Joselito products, which Etxebarri has been using for more than 30 years, Arginzoniz declares "what I like most about Joselito products is quality. After several months of exhaustive creative process, Arginzoniz has shown his new creations with some elaborations that are reinterpretations of his best-known dishes and others that are totally new.
