The American establishment offers its “Creme de la Crème Pommes Frites” for 200 dollars, or about 170 euros.

The precious dish is the work of chefs Joe Calderone and Fredrick Schoen-Kiewert.

It is covered with 23 karat gold leaf and made with Chipperbeck potatoes from upstate New York.

The recipe includes, among other things, Dom Pérignon champagne, truffled Guérande salt, truffle butter, truffle oil and black summer truffle shavings from Italy.

“The truffle is the star ingredient,” commented Frederick Schoen-Kiewert.

Luxurious ingredients

New York cooks also used Swiss raclette with truffles and three months ripened, organic crème fraîche made with milk from natural grass-fed New Jersey cows, and pecorino. The potatoes are fried twice in the fat of geese raised free in France. This technique guarantees crispy fries on the outside but tender on the inside. The aim of the chefs is to offer their customers "a unique and delicious experience".
