Parisian flan with us, pastel de nata in Portugal, custard tart in England, pasticciotto in Italy, we find the flan in many pastries around the world.

This is a very old preparation that dates back to the Middle Ages, we find the first traces in England in the 14th century.

Flan was served in 1399 during the coronation of Henry IV of England.

It is generally offered in a dough (puff or broken) but can also be served with a caramel sauce. 

The recipe for the custard tart:

- 1 shortcrust pastry

- 1 liter of milk

- 170 gr of sugar

- 1 vanilla bean

- 3 eggs

- 100 gr of cornstarch

In a saucepan, bring the milk with the sugar and the seeds of the vanilla pod to a boil and let infuse for 15 min.
