Europe 1 met with Xabi Ibarboure, the chef preparing the working lunch menu that will be attended by the seven G7 heads of state on Sunday afternoon.

The subject of inequality, at the heart of the G7 Biarritz, will be discussed during a working lunch on Sunday. And if the heads of state will first be focused on their conversations, the menu that will be served to them has been carefully developed ... Even if its exact title is classified as a defense secret, Europe 1 has been able to visit the kitchens of the chief in charge of realizing it, Xabi Ibarboure.

"Things that happen once in a lifetime"

In his starred restaurant, the latest preparations have been simmering all night. The chef spent 15 hours in his kitchen, so that everything was perfect. And for good reason: when he received a phone call from the Elysee asking him to make a menu for seven heads of state, he did not believe his ears.

"These are things that happen once in a lifetime," he smiles. "We put all our life and our soul into the signature dishes we will serve them."

"Some meats for some people"

In this case, the lunch will be organized in three services, with a flat entrée and dessert for 30 guests. On the menu, local products, and some adaptations to the requests of some guests. "Some vegetarian dishes, some meats for some people ..." enumerates the chef

And as the work remains the work, the service will have to be fast, precise Xavi Ibarboure: "I even think that one sends entry and main course at the same time".
