An event began on the 19th in which restaurants in Tottori City and other areas will offer new menus using "purple sea urchin," which has become a problem because it eats up seaweed and has an impact on fisheries.

The "Tottori Sea Urchin Moose Fair" was planned by the prefecture and the prefectural fisheries cooperative association, and a total of 19 restaurants in Tottori City and Iwami Town began offering menus using exterminated purple sea urchins from the 19th. .

Among these, Kaiyotei, a seafood restaurant near Tottori Port, offers a limited number of 10 meals a day, consisting of sea urchin mixed with soy milk, made into a mousse, and served with locally caught white squid sashimi and salmon roe. Masu.

Kei Higashida of this restaurant said, ``I wanted to make it easy to eat while also bringing out the flavor of the sea urchin, so I made it into a mousse.I think it's packed with the deliciousness of purple sea urchin.''

In addition,

each restaurant offers its own original menu, such as

chawanmushi topped with sea urchin and appetizers made with sea urchin and locally caught shrimp.

Purple sea urchins, which are occurring in large numbers along the coast of Tottori Prefecture, are eating away at seaweed, causing a deterioration of the habitat for shellfish and fish, and the prefecture is hoping to use the exterminated sea urchins to revitalize the fishing industry.

This event is being held until the 25th of this month, and participating stores and menus can be found on the ``Tottori Blue Carbon Project'' homepage.
