Cheerful songs and the bustling crowds of Hotan Night Market fill the vast night, and recently, reporters came to Hotan in Xinjiang to take you to see the "late-night canteen" here.

The shouting and screaming, mixed with the aroma of food, caused customers to gather in front of the stalls, waiting for the food to come out.

The reporter met Wang Xuan's family, a tourist from Xi'an, at the night market, and she told the reporter that her family came to Xinjiang for tourism and was accidentally captured by the Hotan Night Market and "couldn't pull out their legs." This skilled "foodie" is dining here for the second time today, and she went straight to her favorite stall.

What attracted Wang Xuan was a "heavy-flavored" dish, grilled lamb intestines. The sheep intestines are charred on wooden skewers and sprinkled with cumin and chili peppers, and the crispy skin is tender and juicy. After waiting for a short time, the barbecue owner reached out and handed over the delicacy, and when he took a bite, the grease burst in his mouth.

Barbecue owner Abulim, a "post-90s", told reporters that he can now sell more than 3000,<> skewers a day on average, and it will be better on weekends.

There are many baked egg stalls scattered in Hotan Night Market, and no matter which egg stall you are in, it is full of unhurried "egg eaters".

The baked eggs here are not so "simple". The egg roaster mixes the goose egg yolk with egg yolk and pigeon egg yolk, then pours honey, garnishes with saffron, stirs on a charcoal fire and roasts. If you want to "make up" a little more, let quail eggs and duck eggs blend in.

At 9 p.m., the national characteristic performance officially began, and tourists from the south and north feasted their eyes while feasting on the Hotan Night Market. On the stage, hand drumming, solo singing, and knife dance appeared one after another... Zhang Haixia, a tourist from Nanjing, eats barbecued meat while shaking her body to the music. Liu Jin, a cadre of the Hotan District Cultural and Tourism Bureau, said that in recent years, the Hotan Night Market has been burning all over the north and south of the Tianshan Mountains. The local government has built Hotan Night Market into a characteristic business card integrating food, singing and dancing and tourism, and at the same time absorbs the surplus local labor force who love cooking and can sing and dance, driving them to employment, entrepreneurship, poverty alleviation and prosperity. In the future, we hope to build Hotan Night Market into a "Xinjiang brand" and then go to the whole country.
