For 4 people

  • 12 eggs

  • 30g butter

  • Salt pepper 

Recipe

  • Break the eggs into a bowl, salt, pepper and whisk without breaking them too much.

  • In a wide saucepan, melt the butter over low heat.

  • Pour the egg mixture, keeping the equivalent of one in the bowl.

  • Stir constantly with a flat spatula, cooking should be gentle and gradual.

  • Once the lumpy consistency has been reached, stop cooking and pour in the remaining raw egg with a piece of fresh butter.

  • Arrange the scrambled eggs in a slightly deep dish and sprinkle the chanterelles on top.
