12 eggs
30g butter

Break the eggs into a bowl, salt, pepper and whisk without breaking them too much.
In a wide saucepan, melt the butter over low heat.
Pour the egg mixture, keeping the equivalent of one in the bowl.
Stir constantly with a flat spatula, cooking should be gentle and gradual.
Once the lumpy consistency has been reached, stop cooking and pour in the remaining raw egg with a piece of fresh butter.
Arrange the scrambled eggs in a slightly deep dish and sprinkle the chanterelles on top.
