In Shimonoseki City, Yamaguchi Prefecture, which is known as one of Japan's leading "whale towns," a new dish using whale tongue was unveiled.

More than 100 restaurants in Yamaguchi Prefecture have been working to develop unique dishes using whale tongues, which have often been thrown away, in an effort to increase consumption of whale meat landed in Shimonoseki City. .



The newly developed dish was named "Kangei Cuisine", which is an abbreviation of "impressive whale cuisine", and an unveiling party was held at a hotel in Shimonoseki City on the 31st.



At the venue, there was "Kujira Tongue Kushiage", which is easy to eat by wrapping whale tongue meat in white onions and deep-frying it, and "Whale Bone Ramen", which uses whale bones for soup stock and puts whale tongue on top instead of char siu. etc. were prepared, and the participants were smacking their lips with new tastes.



Mitsuumi Aoki, Chairman of the Prefectural Food and Beverage Industry Life Sanitation Association, said, "Yamaguchi is the only prefecture in Japan where you can eat this much whale tongue, so I want you to grow up to be a dish that you can be proud of."



Each restaurant in Yamaguchi Prefecture, where the dish was developed, will serve their specialty "Whale Cuisine" from February 1 through the end of February.
