Soba restaurants in Matsue City are bustling with people who want to spend their New Year's Eve eating Izumo soba.

At a long-established soba shop in Okutani-cho, Matsue City, there was a line in front of the shop before it opened on the 31st of New Year's Eve.



"Izumo soba" is made from buckwheat flour that is made by milling the buckwheat seeds and cuticles inside the buckwheat hulls.



A total of 200 servings of soba were prepared, and visitors enjoyed hot ``kamaage soba'' and ``wariko soba,'' which was served on three layers of lacquerware.

According to the store, the price was raised by about 5% this year due to the increase in electricity charges, fuel costs, and the price of soy sauce and bonito flakes.



A man from Osaka said, "I come to Shimane every year because I want to eat this. It's really delicious."



The owner, Hiroshi Sato, said, "It's the busiest day of the year, but I'm doing my best to make good soba. I hope that next year will be a good year by spending New Year's Eve with lucky charms."
