  [Explanation] Walking into Chengcaogou Village, Shangguan Town, Dai County, Xinzhou City, Shanxi Province, the air is filled with a strong scent of flax oil.

In a family workshop of handmade bean noodle cakes, crushing noodles, kneading them into balls, wrapping them in oil and rolling them out... Zhang Runming is working with the women in the village to make bean noodle cakes by hand.

  Daixian Bean Noodle Cake is a local characteristic miscellaneous grain baked pasta. It is handmade with traditional formula and is one of the typical representatives of Yanmen food culture.

In October 2019, the Xinzhou Municipal People's Government announced the "Daixian bean noodle cake making technique" as a municipal intangible cultural heritage, and Zhang Runming is the inheritor of this technique.

  My father used to make pancakes in Dai County. I started to learn from my father at the age of 37, and now I have been doing it for more than 20 years, mainly producing bean flour pancakes.

Because bean flour pancakes do not contain sugar, it is the first choice for people with high sugar and diabetes.

  [Explanation] On the basis of inheriting the shortbread making skills of his parents, Zhang Runming produces freshly squeezed pure flax oil and restores the ancient pressing method.

  The bean noodles are grown in the mountainous areas of (Dai County) and in Inner Mongolia.

The oil used is the ancient pressed flax oil produced by ourselves, also known as linseed oil.

The main feature of the oil is that the flax oil is pressed physically at low temperature, which does not damage the nutritional content of the flax seeds, and is nutritious and healthy.

  [Explanation] The bean noodle cake made by Zhang Runming can not only be sold locally, but also can be purchased online.

While strengthening inheritance and protection, Zhang Runming also drove other villagers to increase their income.

  He can make more than 20 bags of noodles every day and can earn 1,000 yuan.

In the past, my father opened a small shop in the county, which mainly produced bean flour pancakes, and now it is passed on to me.

My son not only makes Chinese dim sum, but now also makes Western pastries.

Employ 35 women around the village.

They leave work from 8:00 am to 6:00 pm every day. Their monthly salary is 2,800 yuan, and their annual net income is more than 30,000 yuan.

  [Explanation] With the expansion of the market, it is far from being able to meet the market demand by making cakes by hand.

In March this year, Zhang Runming expanded the production workshop, which is expected to provide more than 50 jobs.

  While making bean noodle cakes, Zhang Runming visited old artists, collected relevant information, combined with traditional delicacies such as other cakes in Dai County, and compiled a set of "Dai County Traditional Art Cake List".

  Now there are not only bean noodle cakes, but also Daixian traditional snacks, such as sugar triangles, pot helmets, and brown sugar cakes. There are more than 20 products in total.

Not only must bean noodle cakes be passed on, but also the traditional snacks of Dai County should be passed on.
