At a long-established sake brewery in Katsuyama City, Fukui Prefecture, the first sake brewing using new rice was held, and the chief brewer confirmed the new sake.

Fukui Prefecture's largest sake brewery in Katsuyama City has been brewing sake using locally harvested new rice since the 6th of this month.

On the 27th, a brand new cedar ball with a diameter of about 1 meter was displayed in front of the eaves of the brewery to announce that new sake was brewed.

After that, the first squeezing was done, and at the sake brewery, the chief brewer put the new golden sake in his mouth and checked the aroma and texture.

According to the manufacturer, this year's sake rice is well-made, and it is finished as a new sake with a sharp taste.

Mr. Nobuzumi Oi, the chief brewer, said, "This sake goes well with salty dishes, so I would like you to enjoy it with Fukui's mountains and seafood that will be available in the coming season."

First squeezed sake will be sold in earnest at retail stores around the country from the 4th of next month.
