Ingredients for 4 persons) :

- 8 endives

- 2 knobs of butter

- 4 tablespoons of honey

- 200 g of Fourme d'Ambert cheese

- 2 rolls of pure butter puff pastry

- 1 walnut kernel to make the broad bean

- 1 egg yolk

- Salt pepper

Recipe :

Preheat the oven to 180 ° C (th. 6).

Chop the endives.

Melt the butter over medium heat in a large, non-stick skillet.

Pour in the endives and honey.

Add salt and pepper.

Cook the endives until they are very soft and there is no more juice (about 10 minutes). 

Cut the fourme into small pieces.

Roll out the puff pastry on a baking sheet lined with parchment paper.

Distribute the blue on top, leaving a 1 cm border, then add the endives.

Hide the walnut kernel in the filling.

Wet the edge of the dough.

Place the second disc of dough on it.

Press down firmly on the edges to close the patty.

Streak the top of the patty with the back of a knife.

Brush with egg yolk. 

Bake the galette for 30 minutes of cooking.

Trick:

For a change, you can replace the blue with goat cheese.
