Chef Alexandre Mazzia, at the head of his restaurant "AM" in Marseille, is the only chef to have obtained a third Michelin star in the 2021 edition, published on Monday.

He reacted with emotion to this promotion in "La Table des bons vivant", Saturday, on Europe 1.

After a difficult year 2020, marked by long weeks of forced closure, Alexandre Mazzia has something to smile about.

The Marseille chef is the only one to win a third star in the 2021 edition of the Michelin guide, published on Monday.

The restaurateur, at the head of the "AM" in Marseille, was invited on Saturday to the program "La Table des bons vivant", on Europe 1. He expressed his emotion and his joy after this award which comes to crown years of hard work.

"It gives balm to the heart, a little warmth to this particular environment at the moment. It is good for the teams", enthuses Alexandre Mazzia.

"It's a good notebook for the many absences I have had with my family."

"A revival of tableware"

With his now famous bite of smoked chocolate eel or his raspberry-harissa sorbet served before dessert, the restaurateur is part of this daring generation.

Mackerel with coffee or cod with grapefruit and Campari sorbet: no combination seems too daring.

"We may represent a revival of tableware," he told Laurent Mariotte's microphone.

"I obviously had a lot of emotions."

Like all his colleagues, Alexandre Mazzia lived a special year 2020 and the doors of his establishment are still closed.

"What we're missing right now are the customers. We can't wait to get back to the table, those smiles, those laughs."

The chef continues to delight his customers thanks to a food truck, installed in the southern districts of Marseille.

"It allows us to keep control."
