Sometimes things have to change in order to stay the way they are.
Eg eggs with mustard sauce: a classic of German home cooking, simple ingredients, manageable effort, both in terms of work and costs.
A dish that can taste very good - but rarely does.
Because the eggs are often so hard-boiled that they swim like bouncy balls in the sauce, which in turn is as thick as freshly poured cement - and is just as heavy in the stomach.
But it doesn't have to be that way.
