  [Explanation] The Mid-Autumn Festival is approaching. In the canteen of the Phosphate Fertilizer Factory, Longchang Town, Fuquan City, Qiannan Buyi and Miao Autonomous Prefecture, Guizhou Province, Liu Xiying and her colleagues began to get busy.

The 53-year-old Liu Xiying has been making mooncakes locally for 25 years. From the initial “canteen Mid-Autumn Festival food”, she has developed into a pillar industry in a small town with a population of about 20,000. She has witnessed the growth of the “mooncake town”.

  [Explanation] Making noodles, mixing stuffing, baking...Through the skillful cooperation of Liu Xiying and colleagues, in a short while, the golden mooncakes are freshly baked.

In Liu Xiying's memory, every Mid-Autumn Festival as a child, she looked forward to eating moon cakes produced in the canteen of the local phosphate fertilizer factory.

  When we ate this moon cake when we were young, the conditions were not good at that time.

A moon cake was broken in half, and the sisters shared it among themselves.

It was delicious and warm. My parents bought it for us and felt that the annual holiday was here again.

  When I made this mooncake, I needed to be transferred to the logistics department. The logistics department came to the canteen to take part in the work. When I worked in the canteen, I came into contact with this mooncake.

It takes two or three hours to fry until a certain time.

If it's mung beans, it will take longer, and it will take five or six hours to fry.

  From eating moon cakes when I was a child to making moon cakes now, we have always inherited this pure handwork, without any machine, from cutting, entering, and selecting, all are handmade.

  [Explanation] The original Longchang moon cake was just a delicacy for the locals during the Mid-Autumn Festival.

After the reform and opening up in 1978, the unique delicacy of "canteen moon cakes" attracted many people to learn how to make moon cakes.

Learn the technique, cook it yourself, and sell it on the market.

After more than 30 years of development, the taste has been improved, and the puff pastry Longchang moon cake with unique flavor has been loved by local and foreign people.

During the Mid-Autumn Festival, you must eat moon cakes, and even the moon cakes just baked at your door. This small canteen moon cake has become a "taste of childhood" that the locals can't forget.

It reminds me of the square outside my hometown when I was a child, the old-fashioned Longchang. This smell brought me back to the scene at that time.

  [Explanation] Nowadays, 5 moon cake production enterprises have been developed in Longchang Town, with an annual output of 235 tons and a sales value of approximately 5.25 million yuan.

In the eyes of the locals, making moon cakes not only inherits the Mid-Autumn Festival culture, but also the best testimony to their happy life.
