" He is crazy ! ". This comment, Michel Bras and his wife heard it most often when they formed the project of this restaurant, a glass vessel overlooking the Aubrac plateau in the heart of France.

A restaurant, wide open to nature, a visceral source of inspiration for Michel and his son Sébastien, chefs in love with their land, their territory: Aubrac, a raw land, simple, harsh, far from everything, but united .

Michel Bras was one of the first in the 1980s to have offered dishes entirely made up of vegetables on his menu, some of which have become famous: gargouillou, a composition of flowers and petals of herbs or the taste of nature, of a garden and a season at a time, on the plate. In their book besides, the taste of the garden is declined in a series of culinary intentions for the 4 seasons, of which the first, intentions of season: the gargouillou with for ingredients of the garden, a list like a poem: Stonecrop, sorrel blood, wild garlic, 4 mustards, Greek valerian, mugwort, round sorrel, catnip, licorice, burnet, chrysanthemum, scallion scallops, chives, Moroccan mint, spinach-strawberry, erythrone dent-de-chien, arugula, Moroccan watercress, valerian phu ...

11 intentions follow, like recipes without instructions, a series of impressions like an invitation to travel.

Spring intention number 2 , country. The endive of open ground poached in a broth in tandoori, lassi with raw milk from here and tangy cooking juice, marinated silverberry and blood sorrels.

Ingredients from the garden: endive, 4 sorrels: red virgin, silver, scutatus.
