200 grams of 70% dark chocolate
125 grams of brown sugar
125 grams of butter
125 grams of flour
1 packet of dry yeast
20 grams of caster sugar
Melt the chocolate gently near a heat source. And mix it with the butter.
Mix the yolks, the sugar. Add the flour and the yeast. And mix with chocolate.
Whisk the egg whites (with the 20 grams of sugar). The result must be very frothy but above all not too firm.
Gently fold the egg whites into the chocolate, molded in small buttered molds and cook for 30 minutes at 180 degrees.
