Chef Benjamin Darnaud, from Meat and Chef (Paris 10th), settles down at the Table des Bons Vivants, relocated to the Salon de l'Agriculture on Saturday, in order to introduce his recipe for yam pancakes made like farçous.

Ingredients for eight patties:

  • 1 yam
  • 2 eggs
  • 1 bunch parsley, minced
  • 1 bunch chopped chives
  • 2 cloves garlic
  • Olive oil
  • Salt pepper

Recipe

Cut the yam into large sections and steam for 15 min.
Once cooked, peel the vegetable, grate it (grater with large holes) in a salad bowl.
Break the two eggs, pour the herbs, grate the garlic cloves and pour a drizzle of olive oil. Mix.
In a skillet over high heat, cook small heaps (about 10 cm in diameter) and flatten. Allow 5-6 minutes per side. Let cool and enjoy.
