Bakers will soon be forced to raise the price of baguette bread if they don't want to sacrifice their margins.
Indeed, to cope with the increase in production costs of energy, fuels but also raw materials, an increase of a few cents will be necessary, report our colleagues from BFMTV on Tuesday.
Bakers, like all French people, are affected by the increase in fuel and energy prices, but the cost of certain raw materials forces them to review their calculations.
For example, since the invasion of Ukraine by Russian soldiers, the price of wheat has soared.
Currently on Euronext, it would trade between 360 and 389 euros per ton, while in 2021 it was less than 200 euros per ton.
Increases between 40 and 50% observed
Representing only 10 to 15% of the cost of a baguette, flour is not the one that will have the most impact, unlike butter and milk powder.
These two raw materials have seen their prices increase by 40% for butter and by half for milk powder.
So many factors that would push bakers to make this choice.
According to INSEE, the price of a classic baguette, which was sold on average at 90 cents last year, could, in the coming days, be sold for 1.20 euros.
