  冬奥主媒体中心智慧餐厅项目主管钟展鹏告诉中新财经,智慧餐厅智能烹饪体验区的所有食物都是现点现做,不同智能设备烹制的菜品不太一样,比如智能炒锅所用的都是新鲜的蔬菜、肉类进行炒制,如蒜蓉西兰花、小炒黄牛肉等;智能煲仔饭机可以现点现制两款煲仔饭,如排骨煲仔饭就是分别下水、生米、油和排骨,其中排骨是中央厨房提前腌制过的;而饺子、馄饨则是提前包好,现场由智能饺子馄饨机烹煮而成。

  传统餐饮模式,因为厨师不同、技艺差别,相同的菜品不一定每次都好吃,而“莫得感情的做饭机器”则拥有烹饪动作精准、出菜水平稳定的优势。

  以智能煲仔饭机为例,这台机器人可以同时操控36个炉头的精准火候,确保煲出的每一锅煲仔饭都能有金黄色锅巴;智能小吃炸品机则能根据订单自动识别不同的食材,并且针对不同食材、不同工艺独立控制油炸温度和时间。

“天上掉美食”成真了

  除了“做饭机器人”,冬奥智慧餐厅还有用于上菜的“空中云轨”。据中新财经了解,智慧餐厅中餐区上方布满了透明玻璃轨道,轨道上的小车都处于时刻待命和迅速行动的状态,这台系统就是智能传送设备。

  “空中云轨”与智能炒锅联动,当智能炒锅装盘完毕后,菜品被上传到空中云轨,随后就会有云轨小车来接应菜品,通过计算出的最优路径,自动将菜品送达对应的餐桌上空,再通过“下菜机”,让美食“从天而降”。

  这套体系的优势在于提高传菜效率、防尘保温、避免了人为接触。智慧餐厅项目主管钟展鹏告诉中新财经,智能炒锅区有18个炒锅,可以同时做18道菜,每个菜大约用时4-6分钟,再通过“空中云轨”和“下菜口”上菜,根据座位远近和当时繁忙情况,送餐需要2-4分钟不等,比真人烹制送餐省时很多。

  除了做饭,机器人还能干什么?“十三五”以来,我国机器人产业年均复合增长率约15%,2020年机器人产业营业收入突破了1000亿元。扫地、擦窗机器人都已经“飞入寻常百姓家”。除此之外,机器人还在快递物流、手术护理、教育娱乐等多个领域有所作为。 (完)
