La Carnaza Burger

It's hard to say no to a good hamburger. In this new place they know well what they are dealing with. Their burgers have won over the public in Santander and now they want to do the same in the capital. Behind the project is Miguel Crespo, who hung up the suit and tie of his position as a Big Data consultant for the sneakers and jeans to continue with the hospitality tradition of his family -we are talking about the Cañadío Group-, but with a project based on high level burgers. In the letter, risky and tempting proposals in equal parts. We start with one of the stars, the Johny Cash, with peanut butter and a delicious cheese fondue served at the table; the Mexican touch arrives with La Llorona, based on cochinita pibil, gouda cheese, pico de gallo and chipotle mayonnaise. MamaQuilla

Every bite of this space leads directly to a country in Latin America. MamaQuilla is the Inca goddess of the moon and protector of women, a name that is already a declaration of intentions. The place aims to be a kind of embassy of the gastronomy of countries such as Mexico, Colombia, Peru, Brazil and Argentina. There will be dishes known from each of these countries, but also others that do not enjoy so much fame on this side of the Atlantic. Both of them, of course, start from a kitchen made with time and care. The project team is made up of Joaquín Serrano and Jorge Velasco, as executive chefs, Luis Díez, as sommelier, and Juan Olmos, at the helm of the cocktail bar. Young people who have gone through some of the most important kitchens of our country in their career. The gastro proposal is designed to share, whether it is the patacón xxl, Joselito belly treated as a pibil, crème fraîche of tree tomato, lulo and pickles or the green snapper ceviche, cubes of avocado tatemados, tirabeques and achiote, without forgetting its Lima cause with carabinero, botija sauce and violet potato chips. The menu is accompanied by an extensive wine list, which includes more than 120 references from half the world. The cocktails enjoy the same prominence in the experience: rums, mezcals and tequilas star in drinks that transport to Rio or Cartagena de Indias. The design, by the MRGO studio, wants to make the diner feel at home, whether in El Patio, the most informal area; in La Estancia, where the evening is accompanied by short shows; and El Primer Piso, a multifunctional space for private events. Pucara

This new tenant of Plaza de Cataluña feeds on ceviches, chili peppers, tiraditos and other delicacies of Peru. At the base of the place, respect for a millenary tradition and the commitment to the ingredients that invite you to travel from the Andean mountain range to the Pacific coast, passing through the Amazon jungle. Essential dishes? Its two ceviches, Thai seafood, with fruity flavors, coconut milk and yellow pepper and the sea bass and crunchy squid with a citrus background; the tiradito of sea bass and octopus in yellow pepper, the mussels with the chalaca -beware! because they sting and a lot-, the cause of chicken and octopus anticucho. Wonder Studio

With two purposes, this place comes to the Salamanca district: to recover the golden years of music and offer an exclusive signature cocktails. Well, place yourself in a place with a retro air, with a lot of leather, wallpaper and vinyl, where tribute is paid to a great musician like Stevie Wonder. From the light to the sound of this Hifi Listening Studio are measured in detail to wrap a cocktail experience in hand. The combos are the work of Guglielmo Calabrò, who has sought inspiration in the most iconic singles of funk and the 70s. Two of his hits – in the cup: Here I am Baby, and one of Stevie's favorites, Part Time Lovers. The design of the space bears the stamp of the architecture studio of Juan Bengoa and among the partners of the place is the Mexican actor Alejandro Spreitzer (Dark desire or Someone has to die).
