Culinary walk – Fabrice Mignot – Pigeon salmis

Recipe for 4 People

Ingredients :

4 wood pigeons

200g Bayonne ham

3 shallots

1 onion

1 carrot

1 tomato

1 bouquet garni

5 sprigs of parsley

2 tbsp. to s. of flour

2 tbsp. to s. goose fat

50 cl of full-bodied red wine

25 cl of chicken stock

2 cl of Armagnac

Preparation :

Gut the wood pigeons, flambé them and keep the heart and liver.

Brown the wood pigeons in a frying pan with goose fat, then flambé them with Armagnac.

Prepare a mince with onion, carrot, shallots and ham, then brown this mince in the frying pan.

Return the wood pigeons, sprinkle with flour, add wine and chicken stock.

Add the peeled and seeded tomato, bouquet garni and parsley.

Add salt and pepper, then simmer covered for 30 minutes.

At the end of cooking, add the mixed hearts and livers, then adjust the seasoning.
