Culinary walk – Fabrice Mignot – Les gimblettes d’Albi

Ingredients :

400 g of flour

4 medium sized eggs

140 g of sugar

10 g of anise

A pinch of salt

Half a packet of yeast

1.5 tbsp. to s. orange blossom

A little water

The zest of a lemon

Instructions :

Wash, dry and crush the anise.

Grate the lemon zest.

In a terrine, put 200 g of flour and the fountain yeast.

In the center, put 2 whole eggs and 2 yolks, a pinch of salt, orange blossom water, sugar. Mix well.

Add the lemon zest and anise.

Gradually add the rest of the flour and the water needed to obtain a firm dough.

Leave to rest for 2 hours.

Shape the gimblettes into a crown shape. Prick them with the tip of the knife.

Immerse them in boiling water. Remove them as soon as they come to the surface.

Drain them on a cloth.

Butter a baking sheet. Place the gimblettes on the plate. Brown with egg.

Bake in an oven heated to 200°C for 15 to 20 minutes.
