Culinary walk – Fabrice Mignot – Le bourdelot

Ingredients :

4 apples (preferably fairly firm varieties, such as Reinette or Calville)

250 g shortcrust or puff pastry

4 tablespoons of caster sugar

4 pats of butter

4 teaspoons of calvados

1 egg yolk for browning

Crème fraîche and corked cider to serve

Preparation

Core the apples, without peeling them.

Roll out the dough and cut out four squares large enough to wrap each apple.

Place an apple in the center of each square of dough.

Fill the cavity of each apple with a tablespoon of caster sugar and a teaspoon of calvados.

Add a knob of butter to each apple.

Fold the dough around the apples and seal the edges.

Brown each Bourdelot with the egg yolk.

Bake at 180°C for around 30 minutes, or until the dough is golden and the apples are tender.

Serve hot or cold, topped with crème fraîche and accompanied by a glass of corked cider.
