Culinary walk – Fabrice Mignot – Les bougnettes

Recipe for 4 people

Ingredients :

1kg of stale bread

A dozen eggs

750g pork neck

Pork stew

Preparation :

Mix the stale bread crumbs with the eggs, seasoned to your liking.

Then, the meat is diced and cooked before being added to the bread and egg preparation.

Balls of approximately 15cm in diameter are then shaped and surrounded by a strainer. Finally, the balls are cooked in thin fat until they turn a caramel color.
