Fabrice Mignot's Culinary Stroll – The kouign-amann

For 4 people, you will need: 

- 125g salted butter

- 150 g of flour

- 1/2 sachet of dry baker's yeast

- 125 g of sugar

- 90g lukewarm water

Dissolve the yeast in 30 g of lukewarm water.

Then add the flour and salt, mix well then add the rest of the water.

Work the dough by hand.

Knead it on a clean surface, fold it and crush it with the palm of your hand, repeat several times.

Place the dough in a terrine, cover with a clean cloth.

Let it rest for about 2 hours.

Preheat your oven to 180°C (th.6).

Flour the work surface and spread the dough as much as possible then spread the butter on the dough, up to about 1 to 2 cm from the edge. 

Then sprinkle the sugar evenly. 

Fold the dough in three, like a wallet, lengthwise, then fold the sides to fold into a wallet widthwise. 

Make sure your work surface and your rolling pin are well floured, then roll out the dough again lengthwise and widthwise, gently, without bringing out the butter and sugar. 

Once spread, repeat the folding step, lengthwise and widthwise.

Roll out one last time and roll the dough like a sausage. 

Cut out portions of dough and place them in buttered moulds.

Add the remaining salted butter in pieces on top. 

Bake for around 35 mins.

Turn out and sprinkle with a little sugar.
