The gourmet table bible has delivered its verdict.

The Michelin Guide Italy 2023 has awarded our country 38 new stars.

The three Italian stars thus rose to 12

, bringing

Antonino Canavacciuolo

into the Olympus of haute cuisine with the Piedmontese restaurant Villa Crespi, who convinced the Michelin guide team "for the ability to create a travel experience in Italy, with the diner who will find the tastes of his beloved Campania, of the Mediterranean, of the whole of Italy to project the guest into a dimension of total, complete cuisine, of respect for the ingredient and taste.

A cuisine that without frills wants to reach the heart, the palate, and remain in the memories.

Even Orta San Giulio is now a place worth the trip ”.

The new two stars are 4, for a total of 38 restaurants and 33 new single-star hotels that reach 335.

Finally,

16 were awarded with the green star

which represents the recognition of the commitment to sustainability.

The evaluation was introduced in 2020, the year in which there were 13 green restaurants, while in 2023 49 were colored. They are "kitchens committed to enhancing seasonal products, innovation, social commitment, the use of renewable energy , actions against food waste and zero waste ".

The number of gold ones goes from one star, which “is awarded to restaurants that use top quality ingredients, where the dishes - with distinct flavors - are prepared to a consistently high standard;

to that of two “assigned when the chef's personality and talent clearly show through his dishes;

his cuisine is refined and inspired ".

Up to a maximum of three “assigned to the superlative cuisine of chefs at the height of their profession;

their cuisine has become an art form and some of their dishes are destined to become classics ”.

“There is no secret and mathematical formula: we are only looking for truly excellent cuisine.

Some Michelin Stars are innovative, others traditional;

some offer set menus, others an à la carte choice;

some are informal restaurants, others formal ”,

explains one of the inspectors of the Guide

:“ Nobody will like every single starred restaurant, and that's right.

We just say "these are the restaurants with the best food, where you can have the most extraordinary culinary experiences".

It is then up to the reader to choose the one that best suits their needs and / or preferences "

Most of the novelties are revealed in

Lombardy

with 7 starred novelties, among which Andrea Aprea's return to the guide in Milan and the city of Pavia, with the Lino restaurant, a novelty with an international character that awakens the provincial capital after several years .

Tuscany

, with 5 starred novelties in which Vito Mollica 's

Chic Nonna stands out, "practically a museum and the star of Cannavacciuolo Vineyard, a splendid resort in a wine estate in the Tuscan countryside led by the well-known chef from Campania and a young talent" Guide.

In Sicily there are

5 novelties, where we see 2 stars assigned to St. George by Heinz Beck, in which a young chef, Iuliano, at the helm of the kitchen since summer 2022, performs "recipes of great taste, simplicity and remarkable precision, with all the known lightness of his mentor ".

In addition, the return of chef Mantarro to the Prince Cerami of Taormina and a new vegetarian star, the Tenerumi, on the island of Vulcano, which also holds the green star for its commitment to sustainability.

Four novelties in

Liguria

where, on the border of France, a gourmet seafood cuisine returns to Balzi Rossi and Casa Buono, defined as “a small atelier of passion led by a young couple”.

Lazio

excels thanks to the news about Rome, of which two restaurants celebrate the arrival of the two stars: Enoteca La Torre with the chef Domenico Stile and Acquolina with the young Daniele Lippi, “two kitchens of great quality and precision where fish is the 'primary element and taste always comes first ”, concludes the Michelin Guide.
