Hällefors municipality is the client, with a contribution from Region Örebro County.

Performers are students in their third year at the Restaurant and Hotel College in Grythyttan. 

Last year there was a similar mission from the municipality, then linked to the sustainability goal Agenda 2030. 

- Then came the war in Ukraine and then I thought that I need to turn this around, and therefore it's about the degree of self-sufficiency, what might a self-sufficient Hällefors taste like?

says Annika Göran-Rodell, assistant professor.

Low degree of self-sufficiency

In the kitchen, the students work full time composing dishes from what is already available.

The work must be graded after the end of the course.

In November, the students will also pitch their dishes to the region, Hällefors municipality and the county board. 

- Our group is very interested in the fact that there are many fun invasive species here in Hällefors, which can increase the municipality's degree of self-sufficiency in its own food, says Viktor Breström, who is studying to become a culinary chef.

Today, Sweden is only completely self-sufficient in carrots, grain and sugar.

Annika Göran-Rodell hopes the course will contribute to inspiration for higher self-sufficiency.  

- I hope that the course will help and provide an understanding, both in the municipality and that it can give ideas to others how we can achieve a greater degree of self-sufficiency, she says.
