The culinary chronicle of Fabrice Mignot: the apfelkiechles

Recipe : 

Ingredients for about thirty donuts  

• 6 medium-sized apples (Pippins from Alsace for their tangy side) 

• frying oil 

• 100g of sugar + 1 tablespoon of cinnamon powder mixed 

The batter 

• 200 g of fluid flour 

• 2 eggs 

• 125ml of milk 

• 125 ml of blond beer 

• 1 pinch of salt 

• 1 C.

1/ Prepare the batter: in a bowl, pour the flour and form a well.  

Place the eggs in it and mix delicately with a whisk while pouring in the milk and then the beer as you go. 

Add the salt and the sugar.

You should obtain a device that is noticeably thicker than pancake batter.

Let it rest for at least 1 hour to promote fermentation. 

2/ Peel the apples, hollow them out using an apple corer and cut them into slices about 5 mm thick.

Pour the oil into a frying pan (at least 1/2 cm high).

Dip the apple rings in the batter and fry them for a few minutes on each side. 

The donuts are cooked when they have taken on a nice golden color. 

Place them on absorbent paper to absorb the excess fat and roll them in the sugar and cinnamon mixture. 

Enjoy them still a little warm, it's delicious!
