These delicious little pancakes that contain potatoes are an ideal accompaniment to many dishes, especially in sauce, such as Bresse poultry with cream.
We owe them to the famous mother Blanc, whose grandson, Georges, is today one of the most famous cooks in France.
Elisa Blanc was born in 1883 in Ain, she took over the family inn in Vonnas and was awarded 2 stars in the Michelin guide in 1933. The prince of gastronomes, Curnonsky considered her to be the best cook in the world.
Among the famous "Lyonnaise mothers", Mother Brazier (herself trained by Mother Fillioux), Mother Guy (perhaps the first – she was mentioned as early as 1759 when she ran a guinguette), Mother Maury… They are dozens, often former cooks of bourgeois families, to have opened their establishment by offering simple, but very tasty cuisine.
The recipe for Vonnassian pancakes
Ingredients :
500 g potato
30 cl of milk
50 g of butter
50 g of flour
3 eggs and 4 whites
Salt pepper
Cook the potatoes
Pass the pulp through the vegetable mill
Add milk, butter and flour
Incorporate the eggs
Heat a blinis pan with a little clarified butter and cook the pancakes
Keep them warm in the oven
