Boudoir is also called Champagne biscuit, because it often accompanies this drink.
Two chiefs can lay claim to its invention: that of Amedeo VI of Savoy who would have created it for Charles IV of Luxembourg.
And the great Antonin Carême, in the 18th century, to satisfy Talleyrand.
This last theory seems the right one, because it is well supported: Talleyrand used to dip a biscuit in his Madeira, a biscuit with a spoon which disintegrated on contact with the liquid.
The chef has therefore fashioned a more “solid” and resistant biscuit.
The biscuit was named "boudoir" in allusion to the diplomacy of the same name practiced by this brilliant statesman who probably avoided the worst for France during the Treaty of Vienna in 1814-1815.
The ladyfingers recipe
Ingredients :
120g egg yolk
180 g of white
80 g of flour
30 grams of sugar
Icing sugar
Beating egg whites
Mix the yolks well with the sugar then add the whites and the flour
On a baking sheet, make small sticks with a piping bag
Bake for 10 min at 180°C
Take the cookies out of the oven and sprinkle them with icing sugar.
Continue cooking for another 10 minutes
