The origin of the word accra is African, it means "vegetable fritters" in the Ewe language, in the ancient kingdom of Dahomey.
Famous in the West Indies, we also find accras in Portuguese, Cuban or even Brazilian cuisine.
It was in the 17th century that Norman settlers landed in the West Indies and brought with them the famous cod.
It is also used to pay the slaves, who accommodate it with bananas or rice.
Antillean acras recipe
Ingredients :
400 g of salted cod
25 cl of milk
300 g of flour
4/5 small new onions
2 cloves garlic
1 chilli
1 lime
Parsley
Coriander
1 C.
c.
baking soda
Salt pepper
Desalt the cod for 24 hours
Plunge the cod into a large volume of cold water and bring to a boil
Take it out as soon as the water boils and crumble it
Chop the parsley, coriander, garlic, onions, chilli, lemon zest and mix with the cod
Mix the flour and milk well and incorporate this paste into the cod
Rectify
Mix lemon juice and baking soda
Add to mix
Let stand 1 hour
Make small meatballs and fries in oil at 180°C
