The stoemp, pronounced "stoump", is a Belgian specialty which made its appearance in Brussels, at the beginning of the 19th century, in small estaminets.

A complete dish made up of mashed potatoes and vegetables (carrot, cabbage, leek) stoemp comes from the Flemish “doorgenstoempte patatjes” (mashed potatoes).

 It was, like hotpot, a popular dish, often reserved for the most modest classes.

In Belgium, stoemp is the classic accompaniment to sausage, grilled bacon or blood sausage.

However, stoemp is not prepared like mashed potatoes.

Leek stoemp recipe

Ingredients :

  • 500g mashed potatoes

  • 1 onion

  • 300 g of leek

  • 50 g of butter

  • 15 cl of milk

  • Salt pepper

  • Peel and cut the potatoes into pieces

  • Slice the onion / wash the leeks and cut into rings

  • Brown the onion, add the potatoes and leeks

  • Salt and add 1/2 glass of water

  • Simmer for 40 minutes

  • Add the butter, the milk and mash everything with a potato masher

  • Rectify
