• Three former students of the school of agricultural engineers in Toulouse have developed recipes for cookies made from legumes.

  • They use white beans to make their cookies, which allows them to obtain a Nutri-Score A, a first for cookies found in traditional supermarket shelves.

What if we could have a snack, without feeling guilty?

This challenge, three graduates of the Purpan school of agricultural engineers in Toulouse, took up by creating the first cookies displaying a Nutri-Score A indicator and which will soon be sold on traditional shelves.

To create a cookie that is both good and crunchy, they used an ingredient that is surprising to say the least, which is more often found in savory than sweet groceries: white beans, from the French sector.

100% plant-based

“It has the advantage of adding texture and replacing the technical properties of butter.

It also lightens the sensation in the mouth, without impacting the taste.

Our cookies are 100% plant-based,” assures Robin Castello, one of the co-founders of the Mioum brand, a snack enthusiast like his two acolytes Guillaume and Cédric.

There is no question for them of sacrificing taste and pleasure for a balanced diet either.

There is therefore a lot of sugar, from the beet industry, and fat, in particular thanks to the almond puree.

This keeps the crispy side that we love so much in cookies.

Products that come in blueberry-almond or even cranberry-macadamia versions, without preservatives.

They are made in Toulouse and will be available in the supermarkets of the metropolis or for direct sale on the site of the young company.

The entrepreneurs, who have taken up residence in the Grand Marché food nursery, north of the Pink City, have launched a crowdfunding campaign on the Miimosa platform to create their eco-responsible packaging, made of 72% paper and therefore recyclable.
