Fiadone is a cheesecake originating from Corsica, which is savored mainly in the north of the island.
It derives from "fiadoni", small Italian cakes whose recipes can be found as early as the 16th century.
For a long time, this cake was reserved for special occasions: Christmas parties, Easter, weddings or baptisms.
Today, it is consumed all year round.
To make this cake, you need Corsican lemon and brucciu.

Brocciu is a cheese made from the whey (lactoserum) of goats or sheep.
Legend has it that the recipe for making brocciu was transmitted to Corsican shepherds by Solomon.
It has been a protected designation of origin since 1998.
The fiadone recipe
Ingredients :
500 g brocciu
5 eggs
180 g of sugar
1 lemon
1 dash of brandy
Crush the brocciu
Beat the eggs with the sugar
Mix everything with the dash of brandy and the lemon zest and juice
Butter a mold and pour the preparation
Bake for 25 minutes in an oven at 180°C
