But for the first time in two years, some remain standing, leaning on the counter, like Vincent, a regular who savors this moment: "I drink coffee, always at the counter and I rarely sit in the dining room. I really like this little moment that does not take a lot of time, but which is convivial", explains Vincent.

A habit which, for him, is above all the identity of French bistros.

"It's a bit theatrical place to live and all that, so, yes, it's important that it comes back. It's important that it reexists again because it had disappeared a bit", he says all smiles .

A third of the turnover of this restaurant

A small return to life before which is already beginning to be felt.

Elisabeth, the manager, notices a recovery with the return of old habits.

“We noticed that people were starting to stand up a little more at the bar and that the regulars, who usually sit down, stay up,” she explains.

A return from customers that greatly satisfies Elisabeth, since she makes a third of her turnover thanks to standing drinks.
