This shellfish has been consumed since the dawn of time by humans.

It would seem that during Antiquity it was used as currency.

It was also used to protect against disease.

Until the 16th century, it was called "large shell" or "sea comb".

His name is then associated with the pilgrimage to Santiago de Compostela.

This is the emblem of pilgrims who wear a shell on their coat or hat...

The recipe for scallops with a clothespin


Ingredients:

- 16 beautiful scallops


- 1 apple


- 10 cl cider


- butter


- Salt / pepper


1. Gently open the scallops, leaving the two parts attached

2. Remove bards and coral

3. Cut the apple into brunoise

4. In each scallop, place the apple brunoise, a tbsp of cider, a knob of butter, salt and pepper

5. Close the shell with a wooden clothespin

6. Bake for 5 min at 180°C
