The French know how to taste wine, but what about knowledge about its production?

Émile, TikTok's star winemaker, is there to share anecdotes and secrets with you.

First, white wine can be made from red grapes: all you have to do is squeeze the juice without macerating the bunches with the skin of the berries.

Then, global warming has an impact on wines: it makes the sugar level rise faster than the flavors, and therefore the alcohol level of the bottles rise.

To have wines as tasty as before, the alcohol level is now higher.

If the French vines are a national pride and constitute the richness of the local heritage, they almost all have an American touch: “Towards the end of the 18th century, the phylloxera aphid ravaged all French and even European vineyards.

This aphid destroys the vines, but we realized that the American roots were not affected.

So we imported American rootstocks to which we grafted French grape varieties, such as Sauvignon or Chardonnay.
