The ray is a magnificent fish, descended from the rajid family and consumed by man since Antiquity.

The Romans accompany it with their famous fermented sauce: garum.


One of the most famous ways to prepare skate wing is "Grenoble style", served in a butter sauce with lemon, capers and croutons of bread.

The origin of this sauce is not very glorious: before the invention of refrigerated trucks, the fish which arrive in Grenoble, especially during the summer months, are no longer of the first freshness ... They are therefore covered with a powerful sauce to mask the taste.

The Grenoble-style skate wing recipe:

Ingredients :

- 1 piece of skate wing weighing 1.2 kg


- 50 gr of butter


- 4 tbsp of capers


- 4 tbsp of bread croutons


- 1 lemon


- salt / pepper

1. Cook the skate wing in a broth for about 25 minutes

2. Melt the butter and add the croutons, small diced lemon, capers, then season with salt and pepper.
