The vegetable table is the new culinary trend of 2021. Like vegetarianism, this consists in banning all kinds of meats, but also all other animal products such as milk, eggs or even honey.

A booming fashion that is arriving on the tables of the greatest restaurants… and even on the plates of the Élysée Palace.

Gone are the days when vegetable cuisine was the poor relation of the greatest gastronomic tables.

Vegetation has invaded the kitchens of the greatest masters, even reaching the Élysée Palace.

Today, the great chefs like Alain Ducasse, Pierre Hermé and Guillaume Gomez, ex-chief of the President of the Republic, are getting started. 

What is the vegetable table? 

The vegetable table consists of cooking while avoiding as much as possible foods of animal origin.

On the menu: fruits, vegetables, cereals and even edible flowers.

The vegetable diet has multiple benefits, especially for health but also for the environment.

Long shunned by top chefs, plants are back in fashion this year.

Alain Ducasse recently opened his table around naturalness in the 10th arrondissement of Paris.

"Safid" is a refectory which offers a cuisine composed of 95% vegetables and cereals, with a low environmental impact.

The dishes vary every week.

On the menu: quinoa, summer vegetables, crushed pepper with paprika, or a roasted eggplant served with a caviar condiment of eggplant, walnuts and basil.

The great pastry chefs have also decided to get involved.

Pierre Hermé made a dessert without animal products.

Its macaroon, "Roses des sables", is made from grilled almonds and almond milk chocolate. 

The plant at the Élysée

The plant has even arrived on the table at the Élysée.

Brigitte Macron would have asked the former chef of the presidential palace, Guillaume Gomez, to create menus using more than ten fruits and vegetables per day and not five, as recommended by the government.

Moreover, Guillaume Gomez's next cookbook will focus solely on vegetable cooking.

The vegetable table at home

If you want to eat plant-based at home in order to improve your health and your carbon footprint, it is advisable to favor grains, vegetables and sometimes fish from sustainable fishing.

You also have to choose local and seasonal products.

You can also add edible plants to your diet such as herbs and flowers to your plate.
