- Danfash Al-Sammak is a man in his eighties. He lives in the center of Karbala city (south of Baghdad). He lived and grew up there and practiced fishing since his early childhood.

He was patient and achieved his goal, and his passion for this profession led him to open a small shop for grilling fish. Over the decades, he achieved great popularity in Karbala and exceeded it to other provinces.

Danfesh says that grilling fish depends on the person’s psychology, and there are several things that must be taken by the owner of the profession, including knowing the type of fish that the customer desires, including (linen, carp and brown) and these qualities are somewhat less in the rivers of Iraq today “due to overfishing And the state's lack of interest in lakes and rivers," he said, noting that grilling fish is currently limited to carpi, silver and seagrass, which are raised in lakes and floating cages in rivers.

Al-Sammak stresses that the process of grilling fish is with firewood of special qualities.

Despite his old age in the profession of grilling masgouf fish, which his son helps him in this profession, he cannot leave the place where he grew up and grew up, and even customers do not accept to buy from the store unless they see the fish dung in the store.
