"Agaricius bisporus", such is the scientific name of this famous mushroom known as "of layer".

A cultivated mushroom whose origins are said to be Asian and which appeared in Versailles under Louis XIV.

It was his gardener, Jean-Baptiste de la Quintinie who started growing it.

Initially cultivated in the open air, it will then be grown in closed and humid places, in quarries south of Paris or in the catacombs.

From 1895, the year when work on the metro began, production moved to the Loire (Saumur).

The majority of Paris mushrooms in France are now produced in the Loire Valley.

Ingredients for 4 people:


- 400 gr of button mushrooms


- 10 cl of olive oil


- 1 pinch of coffee powder


- ½ lemon juice


- 10 gr of Parmesan


- 1 tsp of chopped chives


- Fleur de sel / pepper

Heat the olive oil slightly, put it in a bowl with the coffee and let infuse for 30 min.

Wash the mushrooms thoroughly and cut off the earthy end.

Cut them into thin slices with a mandolin

Drizzle with lemon juice, coffee oil, sprinkle with Parmesan, fleur de sel, pepper and chives
