Linköping municipality wanted a local bread in the municipality's school canteens, but discovered that all flour used for the bread they make comes from the large mills in Uppland and Halland where it is mixed with grain from other parts of the country.

- It is really crazy that the grain should be run somewhere else in Sweden and then run back here as flour, says one of the driving forces in the project, Åsa Kullberg who is the dietitian in Linköping municipality.

After a survey, it was discovered that there is still a mill in Östergötland that can handle a larger order, the one in Skärblacka.

There they use grain from a handful of farms nearby.

Bread becomes more expensive

The local flour is more expensive than usual.

The loaves that Linköping municipality has now ordered cost 26.50 (excluding VAT) each, it is a couple of kroner more expensive than the loaves the municipality previously bought from the bakery and the breads have also become more expensive due to the municipality's requirement that the bakery's trucks run on renewable energy .
